Method
1.Preheat oven to 180°C/160°C fan forced. Lightly grease a 4-cup ovenproof dish with butter.
2.Cook kumara in a large saucepan of boiling, salted water for 10 minutes, until tender. Drain and return to pan. Roughly mash with milk and eggs, mixing well. Add butter, cinnamon and nutmeg and mix until smooth. Add half of parmesan, season to taste and spoon into prepared dish. Combine remaining parmesan with swiss-style cheese and breadcrumbs. Sprinkle evenly over kumara mixture and dot top of gratin with extra butter.
3.Bake for 40 minutes, until golden. Serve.
