Method
1.Heat oil in a wok on high. Stir-fry mince for 2 minutes. Add vegies and rice and cook for 3 minutes, until heated through.
2.Stir in stock and cook for 2 minutes. Fold through parmesan and parsley and season to taste.
3.Ladle generously into bowls and top with extra grated parmesan. Serve hot pot with green salad, if you like.
