Method
1.Preheat oven to moderate, 180°C. Line 2 oven trays with baking paper.
2.Melt butter in frying pan on medium. Saute leek for 3-4 minutes, until tender. Add pumpkin, cook for 5-8 minutes, stirring occasionally until tender. Stir through capsicum, artichoke and parsley. Season to taste. Remove from heat and cool slightly. Mix in cheese.
3.Layer 3 sheets of filo, spraying each with oil. With the long side facing you, cut stack into 4 strips. Place 1 heaped tablespoonful onto the middle of each strip. Fold in sides and roll firmly like a spring roll. Repeat with remaining filo and filling.
4.Arrange rolls on trays. Spray with oil and sprinkle over sesame seeds. Bake for 15-20 minutes, until golden. Serve with tzatziki, if liked.
If liked use mixed antipasto vegetables, in jars or tubs.
