1.Combine lime juice, kecap manis and tomato sauce in a bowl and set aside.
2.Heat oil in a wok on high and stir-fry carrot and capsicum for 1 minute, until just tender. Remove from heat and set aside.
3.Return wok to heat on medium. Stir-fry garlic and mince for 5-7 minutes, stirring to break up any lumps, until brown.
4.Return vegetables with lime juice mixture, shallots and mint to wok and toss to combine. Garnish with mint and serve with steamed rice.
Kecap manis is a dark brown, thick and sweet indonesian soy sauce. It usually contains star anise, garlic and palm sugar, giving it a sharp, complex flavour. Find it at supermarkets and Asian food shops.
