Make the most of this season's bounty of beans with this delicious summer bean and tomato salad recipe. Starring green beans, snow peas and snow pea sprouts, this healthy side dish is a winner
1.Place beans and snow peas in a heat-proof bowl. Cover with boiling water. Set aside for 2 minutes until bright green and tender crisp. Drain and refresh under cold running water.
2.In a large frying pan, heat oil on high. Sauté shallot and garlic for 1 minute until aromatic.
3.For the dressing: In a jug, whisk all ingredients together. Season.
4.Combine beans, peas, shallot mixture, tomato and parsley. Add dressing. Sprinkle with almonds and sprouts.
Toast almonds in a dry frying pan over medium heat, tossing often until lightly golden.
