1.Preheat the oven to 200°C. Make thin cuts 7-10mm apart, about two thirds of the way through the kumara, being careful not to cut them all the way through.
2.Place the kumara in a large baking dish lined with baking paper and brush them with 2 teaspoons of the olive oil. Bake the kumara in the preheated oven for 20 minutes.
3.Meanwhile, combine the remaining olive oil, lime juice, chipotle sauce and lime zest. Remove the kumara from the oven and brush them with the chipotle mixture, including inside the slits. Season the kumara to taste with the salt and pepper.
4.Return the kumara to the oven for a further 10-15 minutes, or until they are cooked through. Garnish the kumara with the coriander before serving.
Note
- Chipotle sauce is a rich, smoky, tomato-based sauce flavoured with chipotle peppers (smoked jalapenos). It is available from the international foods section of your supermarket.
