Method
1.Heat oil in a saucepan on medium. Cook onion for 5 minutes, until soft. Add garlic and pancetta and cook for 2 minutes. Add tomato, 1 cup water and basil. Simmer, covered, for 10 minutes. Add brussels sprouts and simmer for 10 minutes.
2.Meanwhile, cook penne in a saucepan of boiling, salted water according to packet directions. Drain. Stir penne through ragu. Top with parmesan to serve.
