Method

1.In a shallow dish, combine chicken breast fillets with thyme leaves, olive oil, lemon juice and garlic cloves. Toss well and season to taste. Chill, covered, 30 minutes. Heat butter and oil together in a large frying pan on medium. Cook chicken 5-6 minutes each side. until browned all over and cooked through. Transfer to a plate.
2.Cover loosely with foil and set aside. Pour 1/4 cup white wine into pan, stirring. Simmer 1 minute. Prepare polenta and blue cheese through. Serve chicken with polenta, steamed broccolini and lemon wedges. Drizzle with pan juices and sprinkle with toasted walnuts.
