Method
1.Preheat oven to moderate, 180°C.
2.Heat a lightly oiled chargrill pan on high. Season zucchini and chargrill for 2 minutes each side until golden, then set aside. Cook chops for 2 minutes each side until golden, then transfer to a large oven tray.
3.Dollop pesto onto lamb and cover with tomatoes, then bake for 40-45 minutes. Add zucchini and olives to the pan and cook for 15 minutes. Serve with mashed potato, if desired.
