Method
1.Heat a large frying pan over high heat. Pack sausages with a fork. Fry sausages for 8-10 minutes, turning, until browned all over and just cooked through. Remove.
2.Sauté onion in the same pan for 2-3 minutes, until softened. Add garlic; cook for 30 seconds.
3.Return sausages to pan along with the maple syrup, vinegar and mustard. Cook for 2-3 minutes, stirring, until onion glaze is thickened and glossy.
4.Serve sausages on mash with a drizzle of pan juices. Accompany with salad leaves.
