Method
1.Heat a wok or large frying pan over moderately high heat. Add 1 teaspoon of the oil; swirl to coat surface. Add egg; swirl to coat surface. Cook for 1 minute, then turn and cook for 30 seconds or until just set. Transfer to a plate, thinly slice and keep warm.
2.Reheat wok over high heat. Add mince; cook, stirring to break up lumps, for 5 minutes or until browned. Transfer to a heatproof bowl.
3.Add remaining oil in wok over moderately high heat. Add cabbage, beans and carrot; cook, stirring, for 3 minutes or until vegetables are just tender. Add oyster sauce, mince, rice, 2 tablespoons water and half the coriander; stir-fry until combined and reheated. Serve fried rice topped with egg and remaining coriander.
Use pork mince instead of pork and veal mince. Omit coriander for kids
