1.Preheat oiled char-grill pan on medium. Grill chorizo 4-5 minutes, turning once, until golden and crisp.
2.CHIMMI CHURRI: Process all ingredients in blender or food processor until smooth. Season.
3.Fill rolls with capsicum, red onion, chorizo and avocado. Drizzle with chimmi churri sauce to serve.
