1.Heat oil in a large frying pan over moderate heat. Add onion; cook and stir tor 5 minutes or until soft. Add capsicum and chilli; cook and stir for 2 minutes or until softened.
2.Add mince; cook, stirring with a wooden spoon to break up lumps, for 5 minutes or until browned. Add tomato and water. Simmer, uncovered, for 8 minutes. Season with salt and pepper.
3.Soak noodles in boiling water in a medium heatproof bowl for 5 minutes; stir noodles to separate strands, then drain. Add noodles to mince mixture with snow peas. Spoon into serving bowls. Serve.
Use chicken mince instead of pork. To blanch vegetables, place in boiling water; leave for 1 minute, then refresh in cold water.
