Method

1.Heat half of rice bran oil in a wok or frying pan on high. Cook chicken in batches for 2-3 mins, until lightly browned. Remove from pan.
2.Heat remaining oil in wok and cook ginger and garlic for 30 seconds, until fragrant. Add capsicum and celery and stir-fry for 2-3 mins, until just beginning to soften. Add soy bean paste, sherry, sugar and sesame oil and stir-fry for 1 minute, until fragrant.
3.Return chicken to wok with 1/4 cup water and stir-fry for 1-2 mins, until cooked through. Stir in lime juice and cashews. Serve with rice.
