Method
1.Lightly spray a large frying pan with oil and heat on medium. Cook onion for 3 minutes, stirring, until soft. Add capsicum and cook for 3 minutes. Remove from pan.
2.Increase heat to high and cook beef for 3 minutes, stirring, until browned. Return capsicum mixture to pan with taco seasoning and stir well. Add 1/2 cup water and bring to boil. Stir in beans and cook for another minute, until sauce thickens and beans are heated through.
3.Warm tortillas according to packet directions. Wrap up beef mixture and serve with lemon wedges on the side.
Slices of red, yellow and green capsicum look terrific mixed together. Kid-friendly tip: kids may enjoy a small dollop of low-fat sour cream on their tortillas.
