1.Heat half the oil in a wok on high. Stir-fry beef in 2 batches, for 2-3 minutes, until browned. Transfer to a plate.
2.Heat remaining oil in same wok. Stir-fry onion, garlic and ginger for 2-3 minutes until onion is tender.
3.Return beef to wok with peas, sauces, mint and chilli. Stir-fry for 2-3 minutes until heated through. Serve with steamed jasmine rice, if desired.
If strips are unavailable, thinly slice rump or round streak. Trim steak and slice across the grain into strips – it’s easier if meat is partly frozen-for tenderness.
