Method
1.Preheat oven to hot, 200°C. Lightly grease a round 3-cup capacity ovenproof dish.
2.In a small bowl, combine ricotta, parmesan, chives and parsley. Season to taste
3.Spoon mixture into prepared dish. Bake for 25-30 minutes, until firm and golden.
4.Serve with lavash or crusty bread (see note).
Accompany with char-grilled vegetables, marinated mushrooms, salami and other cold meats and dips for a delicious antipasto platter.
