Method

1.Heat half of oil in a frying pan on high. Cook onion for 3 mins, until softened. Cool.
2.In a bowl, combine cooked onion, mince, oregano and sauces. Season. Divide mixture into four portions and shape into patties.
3.Wipe frying pan clean with paper towel. Return to heat with remaining oil. Cook patties for 3-4 mins each side, until cooked through. Remove and fry eggs to your liking in same pan
4.To assemble burgers, place a fried egg on base of each roll, top with patty, a slice each of beetroot and tomato, extra tomato sauce and lettuce. Finish with tops of rolls. Secure each with a toothpick, if you like, and serve.

Cooking onion before mixing it into the mince helps to make the onion in the hamburger more palatable and digestible.
