Method

1.Heat 2 tablespoons of oil in a large frying pan on medium.
2.Add green onion; cook 2 minutes, stirring, until softened. Add carrot, celery and capsicum; cook a further 5 minutes, until softened.
3.Transfer to a large bowl with beans, spinach and parsley. Add balsamic vinegar and remaining oil; toss to combine. Season to taste. Crumble over goat’s cheese and serve.
