1.Preheat oven to 200°C.
2.Arrange chicken in a baking dish. Coat with sauce and drizzle with half lemon juice. Sprinkle with paprika. Season to taste. Bake 45-50 minutes, until cooked when tested.
3.Place couscous in a heatproof glass bowl. Add water. Set aside, covered 5 minutes, following packet instructions.
4.Fluff couscous with a fork to separate grains. Stir zest, remaining juice and sultanas through. Toss through rocket leaves and season to taste. Serve chicken on a bed of couscous salad.
