1.Preheat oven to hot, 200°C. Lightly grease a 15 x 25cm oval ovenproof dish.
2.Sift flour into a bowl. Rub in butter using fingertips. Add yolk and a little water if required. Form into a pliable dough. Wrap plastic wrap; rest, chilled, 20 minutes.
3.On a lightly floured surface, roll two-thirds pastry out to fit prepared dish.
4.To make the filling, in a bowl, combine all ingredients. Season to taste. Pour over pastry base.
5.Roll out remaining pastry cover filling; score top. Brush with extra egg; sprinkle with salt and pepper. Bake 25-30 minutes.
Use a 16 x 26cm slab pan, if preferred.
