Sausage and vegetable bake

Sausage and vegetable bake is simple to make, nutritious and wonderfully delicious. This quick meal is loaded with lots of fibre and is very filling - a real powerhouse of a meal.

Ingredients

Method

1.Preheat oven to moderate. 180°C.
2.Heat oil in frying pan on high. Cook sausages 4-5 minutes, turning, until cooked through. Drain on paper towel. Cut into chunks
3.In same pan, sauté onion and garlic 1-2 minutes, until just tender. Add zucchini, eggplant and capsicum and cook, stirring, 2-3 minutes.
4.Transfer the vegetable mixture and sausages to a casserole dish with tomatoes, beans, corn and basil. Mix well and season to taste.
5.Sprinkle with combined bread and cheese. Bake 25-30 minutes, until cheese is golden. Scatter extra basil leaves over to serve.

This recipe can be made using leftover cooked sausages.
