1.Preheat oven to very hot, 220°C (200°C fan-forced). Line a baking tray with baking paper.
2.Sift flour into a large bowl. Using fingertips, rub butter into flour until mixture resembles fine crumbs.
3.Add cheese, capsicum and oregano; stir until combined. Add milk; using a round-bladed knife, stir with a cutting motion until just combined.
4.Transfer to a lightly floured board. Knead until mixture comes together. Divide into 4 portions, then shape each into a roll.
5.Place on prepared tray; spray with oil. Bake 15-20 minutes, or until rolls are golden and sound hollow when tapped lightly.
6.Meanwhile, melt extra butter with oil in a large frying pan over moderate heat. Add onion; cook, stirring occasionally, 15 minutes, or until golden. Transfer to a heatproof bowl. Wipe pan clean.
7.Add sausages to pan; cook, turning, 8-10 minutes, or until cooked. Transfer to a chopping board.
8.Cut sausages part-way through lengthways. Cut damper rolls in half, then place on serving plates. Top bases with sausages and onion. Top with remaining roll halves. Serve with salad.

Use a food processor to combine butter with flour, but don’t over-process.
