Method
1.Microwave, steam or boil potatoes until tender. (To microwave four whole large potatoes, cook on high 20 minutes. They will take about 35 minutes to steam or boil in salted water.) Drain, if necessary, and slice off tops.
2.With a small spoon, gently scoop out inside of potato, leaving a thick shell. Set aside scooped-out potato for another use. Keep potato shells warm.
3.Meanwhile, combine coleslaw and mayonnaise; season to taste.
4.Heat a non-stick frying pan on high. Cook bacon 3 minutes, until crisp. Drain on paper towel.
5.Fill potatoes with coleslaw mixture and top with crispy bacon.
