Method

1.Heat half the oil in a large frying pan over high heat. Add pork to pan; cook for 2 minutes each side or until browned and cooked. Transfer to a heatproof plate. Cover with foil; rest for 5 minutes.
2.Meanwhile, place beans and peas in a medium microwave-safe bowl. Microwave on high (100%) for 3 minutes or until heated. Add butter; mash until smooth. Season to taste.
3.Add remaining oil to same pan over high heat. Add carrot, mustard, honey and stock. Bring to the boil. Cook, stirring occasionally for 3 minutes or until sauce reduces and carrot is tender.
4.Remove pan from heat; stir in chives. Spoon pea mash and carrot mixture onto serving plates. Top with sliced pork. Serve.

Instead of buying chicken stock, use 1 small chicken stock cube and crumble into 1 cup boiling water.
