Method

1.Slit pork fillet in a few places with a sharp knife and push a slice of garlic into each. Rub with oil and sprinkle with pepper.
2.Heat a non-stick frying pan on medium (see Notes). Spray with oil and cook pork for 4-5 minutes each side until cooked through.
3.Transfer to a plate. Brush with syrup, cover with foil and rest for 5 minutes. Slice thinly.
4.PAW PAW SALSA: Meanwhile, combine all ingredients in a bowl. Season to taste. Serve pork with Salsa and snow peas.

If fresh paw paws are unavailable, you can use a 425g can instead. Mango is also great in this recipe.. Pork can also be baked at 180°C for 15-20 minutes.
