Ingredients

Method

1.Heat a char-grill pan or frying pan on medium. Brush pork with oil and season. Cook for 3-4 minutes, turning on all sides to cook through. Rest, loosely covered, for 5 minutes.
2.In a large bowl, combine rice, celery, apple, walnuts and parsley. Season.
3.DRESSING: In a small jug, whisk all ingredients together and season to taste.
4.Thinly slice pork and arrange over salad. Serve drizzled with dressing.

You can replace the pork with chicken, beef or duck.
