Ingredients: 5 cup cooked spiral pasta; 250 gram punnet cherry tomatoes, quartered; 1 red capsicum, seeded, chopped; 1/2 barbecued chicken, meat shredded; 1/2 cup roughly chopped parsley; 3 slices salami or prosciutto, cooked, chopped; 2 green onions, finely sliced; Dressing; 1 tablespoon olive oil; 2 teaspoon white wine vinegar; 1 teaspoon dijon mustard

Pasta salad is the perfect dish for a light lunch or family barbecue. With minimal ingredients needed, this fragrant and scrumptious pasta salad is sure to be a crowd pleaser.

Ingredients

5 cup cooked spiral pasta

250 gram punnet cherry tomatoes, quartered

1 red capsicum, seeded, chopped

1/2 barbecued chicken, meat shredded

1/2 cup roughly chopped parsley

3 slices salami or prosciutto, cooked, chopped

2 green onions, finely sliced

Dressing

1 tablespoon olive oil

2 teaspoon white wine vinegar

1 teaspoon dijon mustard

Method

1.In a large bowl, combine pasta, tomatoes, capsicum, chicken, parsley, salami and onions.

2.In a jug, whisk all dressing ingredients together with a fork.

3.Pour dressing over salad and season to taste. Toss well.
