Ingredients

Method

1.In a large bowl, combine rice, frozen vegetables (peas, corn, capsicum, carrot), 1 cup cheese, tomato salsa, green onions and eggs.
2.Season and mix well. Press half rice mixture in lightly greased 10 x 20cm loaf pan lined with baking paper. Sprinkle with 1/4 cup grated tasty cheese.
3.Top with ham and capsicum strips. Press down firmly. Sprinkle with 1/4 cup grated tasty cheese.
4.Bake 20-25 minutes in moderate, 180°C, oven until firm to touch and golden on top.
5.Set aside 10 minutes. Slice loaf and serve with mixed salad leaves.
