Method
1.Preheat oven to very hot, 220°C.
2.In a small bowl, combine onion and vinegar and toss well. Stand for 20 minutes or until the onion is bright red.
3.Toss the asparagus in oil and season to taste. Place in a single layer in a ovenproof dish. Bake for 10-12 minutes or until just tender.
4.Cook gnocchi according to packet instructions and drain well. Mix with the asparagus in dish and bake for a further 2 minutes.
5.Sprinkle with pine nuts. Serve on heated plates, accompanied with the onion and a sprinkle of shaved parmesan cheese.
If desired, add a little cream or creamy blue cheese during step 4, but this will increase kilojoule and fat content.
