1.Preheat oven to moderate, 180°C. Line 2 oven trays with baking paper.
2.Toss bread in bowl with olive oil. Spread out on 1 tray and season to taste. Arrange prosciutto on the other tray. Place both trays in the oven and bake for 5-10 minutes, until crisp and golden. Cool, then tear prosciutto into smaller pieces.
3.DRESSING: In a small jug, whisk all ingredients together. Season to taste.
4.In a large bowl, gently combine all salad ingredients and most of the dressing together. Serve with remaining dressing on the side.
