Method

1.Preheat oven to 200°C. Place the steaks and half the dressing in a shallow dish. Season to taste and coat.
2.Meanwhile, cook rice according to packet directions. Refresh under water. Place in a bowl with remaining dressing, zucchini, herbs and half the cheese. Season and combine.
3.Place capsicum cut-side up in a non-stick baking pan, fill with rice and sprinkle with remaining cheese. Cook in oven for 15 minutes.
4.Grill beef to your liking. Serve with capsicum, garnish with mixed lettuce.
