Method
1.Preheat oven to hot, 200°C. Grease an 8-cup ovenproof dish.
2.Heat oil in a large heavy based saucepan over high heat. Sauté onion, capsicum and salami for 2-3 minutes, until onion is tender and salami turns golden. Add chicken and cook 3-4 minutes, until well browned.
3.Stir in tomatoes, garlic and spices and cook 1 minute, until fragrant. Mix in rice and stock. Bring to boil. Transfer to dish and season.
4.Cover with foil and bake 30 minutes. Top with lemon and olives. Bake, uncovered, another 5-10 minutes, until rice is tender. Sprinkle with parsley to serve.
