Method
1.Cook pasta in a medium saucepan of boiling salted water, 10-12 minutes, or until tender. Drain, reserving 1/4 cup of the cooking liquid.
2.Meanwhile, heat oil in a medium non-stick frying pan over moderately high heat. Add prosciutto, stir, 1 minute, or until just starting to brown.
3.Add tomato, stir, 2 minutes, until heated and starting to soften. Remove pan from heat.
4.Add pasta and reserved cooking liquid to tomato and prosciutto and toss gently to combine. Season with pepper. Sprinkle feta over and serve with salad, if you like.
