Method
1.Preheat oven to 180°C (160°C fan-forced). Line a large baking tray with baking paper.
2.Combine flour and salt on a plate. Place egg in a shallow dish. Place chips in a large bowl. Roll chicken in flour mixture. Dip in egg, then roll in corn chips.
3.Place on prepared tray. Bake for 30-35 minutes or until cooked.
4.Meanwhile, heat oil in a medium saucepan over moderate heat. Add leek, prosciutto and cinnamon stick. Cook and stir for 5 minutes or until leek has softened.
5.Add rice; cook and stir for 1 minute. Add 2 cups water, zest and juice. Bring to the boil. Reduce heat to low.
6.Simmer, covered for 15-20 minutes or until rice is tender. Remove from heat. Stand, covered, for 5 minutes. Stir in parsley. Season with salt.
7.Spoon pilau onto serving plates. Sprinkle with almonds. Top with chicken.
You can use bacon instead of prosciutto. Chicken lovely legs are skinless drumsticks with part of the bone trimmed. You can use regular skinless drumsticks; cooking time will vary.
