1.Score chicken breasts on one side, at 2cm intervals. Place in a shallow dish. Rub all over with combined oil, oregano, cumin, chilli and salt. Marinate at least 15 minutes.
2.Preheat a char-grill pan or barbecue grill on medium. Cook chicken 5-7 minutes each side, until cooked through and lightly charred. Rest, loosely covered with foil, 5 minutes.
3.Meanwhile, to make papaya salsa, combine all ingredients in a bowl and season to taste.
4.Serve chicken sliced with salsa and lemon wedges.
