1.Preheat oven to hot, 200°C.
2.Heat 2 tablespoons oil in large saucepan on high. Sauté onion for 1-2 minutes until tender. Add mince. Brown well for 4-5 minutes, breaking up lumps with the back of a spoon as it cooks.
3.Add mushrooms. Cook, stirring, for 2-3 minutes, until tender. Stir in wine, bring to boil. Remove from heat.
4.Place flour in a jug. Whisk in cream and water to form a smooth paste. Stir into mince mixture. Return to heat. Bring back to boil, stirring, until thickened. Reduce heat and simmer for 3 minutes. Stir in parsley.
5.Cut rolled filo into 2cm slices. Unfold gently. Place into a medium bowl. Toss with remaining oil to coat.
6.Spoon mince mixture evenly into 4 x 1 1/4- cup capacity ovenproof dishes. Place onto an oven tray. Pile filo on top of each. Bake for 15-20 minutes until filo is lightly browned.
It is important that mince is cooked through completely to destroy any bacteria.
