1.Preheat oven to 180°C. Lightly grease a 20cm round springform pan. Line base with baking paper.
2.Heat olive oil in a medium frying pan on high. Cook bacon, onion and garlicfor 3-4 minutes, until lightly golden.
3.Add sage and cook a further 2 minutes. Remove from heat; stir through honey. In a large bowl, combine rice, bacon mixture, mozzarella and eggs.
4.Mix well and season lo taste. Spoon mixture into prepared pan, pressing firmly. Bake for 25-30 minutes, until golden and firm. Serve in wedges. Top with rocket.
