Method
1.Heat butter in a large frying pan over moderate heat. Add bread; cook and stir for 2 minutes or until golden. Sprinkle sugar over bread; cook and stir for 2-3 minutes or until caramelized. Remove from heat.
2.Place jam and 1/4 cup water in a small saucepan. Cook and stir over low heat for 2 minutes or until jam melts.
3.Spoon bread mixture onto serving plates. Top with quenelles of ricotta, mint and zest. Drizzle with fig sauce. Serve dusted with icing sugar.
