Steamed chocolate cappucino puddings
1.Lightly grease four 1-cup tea or coffee cups.
2.In a small jug, combine instant coffee and milk, stirring to dissolve.
3.In a small bowl, using an electric mixer, beat butter and sugar together until well combined Add eggs, one at a time, beating well after each addition. Fold in sifted combined flour and cocoa powder alternately with milk mixture. Spoon mixture evenly into cups.
4.Arrange cups in a steamer basket. Cover each with a circle of baking paper. Place over a saucepan of simmering water. Cover tightly with lid. Steam 20-25 minutes, until cooked.
5.Meanwhile, in a large bowl, beat cream and vanilla to firm peaks.
6.Remove puddings from heat. Set aside 5 minutes. Serve topped with dollops of cream and dusted with chocolate.
