Method
1.Combine wine, sugar, cinnamon, orange rind and 1 cup water in a large saucepan. Stir on medium heat for 2 minutes, until sugar dissolves. Increase heat to high and bring to boil.
2.Reduce heat to low and add pears. Cover and poach for 30-45 minutes, until just tender. Remove pears and place in heatproof serving bowls.
3.Increase heat to high and boil liquid, uncovered, for 10 minutes, until reduced and syrupy. Pour over pears and serve with thick cream.
Choose pears that are firm and just beginning to ripen.
