Method
1.Preheat oven to 180°C/160°C fan-forced. Line a large baking tray with baking paper.
2.Place rhubarb, in a single layer, on prepared tray. Drizzle evenly with honey; sprinkle with cinnamon. Cover with foil; bake for 10 minutes. Remove foil; bake for 5-10 minutes more or until rhubarb is tender. Remove from oven; set aside.
3.Place meringues on serving plates. Fill with yoghurt; top with rhubarb and drizzle with syrup. Serve immediately.
Serve with ice-cream or whipped cream. Assemble dessert just before serving to prevent meringue softening.
