Method
1.Preheat oven to 150ºC. Line 2 oven trays with baking paper.
2.In a small, clean bowl, using an electric mixer, beat egg whites until soft peaks form.
3.Gradually add sugar, one tablespoon at a time, beating until sugar dissolves and the mixture is thick and glossy. Beat in vinegar and vanilla.
4.Using a large piping bag fitted with a 1cm plain nozzle, pipe mixture into 8cm-long bones (pipe a figure “8” at each end).
5.Bake 10 minutes. Reduce oven to 120ºC and bake a further 20-25 minutes. Allow to cool in a turned-off oven, with door ajar, to completely dry out.
6.Serve dusted with icing sugar.
