Luscious light chocolate cake
1.Preheat oven to moderate, 180°C. Spray a 20cm-round cake pan with oil and line base.
2.In a bowl, using an electric mixer, cream spread and sugar together. Beat in egg.
3.Sift flour and cocoa together well. Fold into creamed mixture alternately with milk, starting and ending with flour.
4.Combine bicarbonate of soda and water. Fold into mixture. Pour into prepared pan.
5.Bake for 35-40 minutes, until cooked when tested with skewer. Cool in pan for 5 minutes. Transfer to a wire rack and ice with mocha icing once completely cool.
Mocha icing
6.Sift icing sugar and cocoa together in a bowl.
7.In a jug, combine water and coffee. Blend into icing sugar mixture until smooth and spreadable.
8.Spread over cold cake.
