Ingredients

Method

1.Lightly grease and line an 18 x 28cm slice pan with baking paper, leaving a 2.5cm overhang.
2.In a large bowl, cream butter, sugar and vanilla together until light and fluffy. Beat in egg.
3.Sift flours and baking powder together. Fold into creamed mixture with enough milk to form a soft dough. Wrap in plastic wrap. Chill for 30 minutes.
4.For filling; place figs, raisins, pecans, honey and lemon zest and juice into a food processor, Process with enough water to make a spreadable consistency. Set aside.
5.Preheat oven to moderate, 180°C. Roll out haft the pastry between 2 sheets of baking paper. Press into prepared pan.
6.Spread filling over base. Roll out remaining pastry. Press over filling. Bake for 30-35 minutes until golden. Cool in pan. Remove using paper to assist. Cut into squares. Serve dusted with icing sugar. Store in an airtight container.
