Corn tortilla with walnut dressing

1.Preheat oven to 180°C. Grease a 20cm round cake pan. Heat oil in a frying pan on medium. Saute onion for 3 minutes, until tender. Stir in garlic and seasoning, and cook for 2 minutes, until fragrant. Add corn, olives and potatoes, stirring to coat. Season to taste. Spoon into prepared cake pan.
2.Whisk eggs and cream together in a bowl. Pour over prepared corn mixture. Bake for 30-35 minutes, until set. Rest tortilla for 10 minutes before removing from pan.
3.Make Dressing as per method below.
4.Cut tortilla into wedges and serve with salad leaves, Dressing and chives.
