Ingredients

Method

1.Place tomatoes and sugar in a non-metallic bowl. Cover with plastic wrap and leave at room temperature overnight.
2.Transfer mixture to a shallow, heavy-based saucepan with all remaining ingredients. Bring to the boil on high, stirring occasionally. Reduce heat to low and simmer 1-1 1/4 hours, until thick and mixture reaches setting point.
3.Pour jam into warm, sterilised jars, label and seal.
4.Serve with char-grilled squid, rocket and lemon wedges, or use jam in stir-fries, on burgers and in salad dressings.
