Method
1.Preheat oven to 200°C/180°C fan forced. Arrange mushrooms and ham in a 27x17cm (base measurement) ovenproof dish. Drizzle with oil. Bake for 10 minutes.
2.Sprinkle mushrooms with cheese. Bake for 5 minutes more.
3.Carefully crack eggs onto ham. Bake for 5 minutes or until cheese is melted and eggs cooked to your liking. Season with pepper. Serve at once.
Use salami instead of ham. Mushrooms are high in antioxidants.
