Grilled sardines with oven-dried tomatoes

Grilled sardines with oven-dried tomatoes

Catching sprats is a rite of passage for Kiwi kids, whether it’s on a DIY driftwood-and-string line, in a bread trap, or scooped up in a net. This salad is born from that experience, with sardines as the starring ingredient. They have a short season in New Zealand, so feel free to substitute them for other small, oily fish. Oven drying tomatoes is a doddle and worth the time it takes – the flavour intensity is sunshine on your plate and palette. Make extra and store in an airtight jar covered in olive oil. Bitter green salad with duck, pear and walnuts

Bitter green salad with duck, pear and walnuts

This salad is full of flavour. Bitter greens cut through richness of the confit duck, the pear adds sweetness and the walnuts texture. Roasted turbot with wasabi custard and olive and lime tapenade

Roasted turbot with wasabi custard, tapenade and Flatbreads

Turbot can sometimes be a bit difficult to find, so any large flat fish (flounder, brill) or even the belly of a large species like kingfish or hapuka will do. - Al Brown

Oxtail stew

Without doubt, oxtail stew is my number-one favourite comfort food. I do have memories of recoiling in horror when my grandmother mentioned oxtail as a delicious meal option, but how wise she was. Apple meringue tartlets

Apple meringue tartlets

This delicious cream-cheese pastry is a key component in my small campaign to persuade people to make pastry rather than buy it. Make it at least 2 hours before you intend to use it. It’s easy to make, easy to handle and beautifully flaky despite being made in a food processor. It is also very versatile and works with sweet or savoury fillings. The success of these tartlets depends upon using apple purée that is not too sweet and a sharp, fruity jam. With these in place the combination of textures and flavours ensures a small but memorable baking triumph. Photograph by Mike Rooke.
