Method

1.Preheat oven to 190°C. Line a baking tray with baking paper.
2.Sift flour, sugar and baking powder onto a flat surface. Make a well in centre and pour in combined eggs and vanilla. Bring ingredients together to form a dough. Add nuts and rind and knead gently to incorporate.
3.Divide into 3 portions. Roll each piece into a loaf. Place on prepared tray. Bake for 20 minutes. Cool on wire racks. Cut loaves on diagonal into 1cm-thick slices.
4.Lay in a single layer on baking trays. Bake for 20 minutes, until lightly browned. Store in airtight containers.
